Altering the composition of atmospheric gases, microbial
growth is reduced, as is the speed of oxidation and the
loss of water which lead to the alteration or spoiling
of foods. MODIFIED ATMOSPHERE PACKAGING (MAP) is a system
aimed at extending the shelf life of fresh foods, conserving
quality without using additives or preservatives, through
the regulation of the atmosphere and the use of barrier
packaging materials. The shelf life of certain foods can
be doubled and even tripled. |
